Butterfly Pea Herbal Tisane

Butterfly Pea Flower (Clitoria ternatea) belonging to the Fabaceae family and is also known as Asian Pigeonwings, Cordofan Pea, Bluebellvine, Cordofan Pea or Darwin Pea.
These wonderful flowers have a striking blue colour due to the high concentration of blue-violet pigments called anthocyanins, the same pigment found in blueberries.
Add lemon juice and it will turn purple.  Add tonic water and it will turn pink due to the change in PH.  This is an excellent iced tea as well as hot.

Tasting Notes: Lightly floral, sweet yet fresh, with subtle earthy notes.  If infused longer, the darker and stronger it will become.
